Myth or reality - Drinking wines in winter by our Myth or reality - Drinking wines in winter by our own Greg Matisse 🍷 
 
1. Wine temperature 
In winter it is easy to fall into two opposite mistakes, serving red wine too warm and white wine too cold. 
Reds' should be around 15 to 18 degrees Celsius, white, and rosé between 10 and 12. 
 
2. Focus on balance and not richness 
Winter is often associated with richer wines, BUT richness alone rarely leads to better drinking. 
Balanced wines tend to feel fresher overtime and sit more comfortably with food. 
 
3. Why letting wine breathe helps in winter 
Because winter drinking is often slower, oxygen exposure becomes more noticeable. 
It will allow to soften the texture, improve balance and makes flavours feel more integrated

Ever Wondered about the story behind The Jockey Cl Ever Wondered about the story behind The Jockey Club Rooms? It's a tale of scandals, shrewd deals, and lateral trial by fire. 
The Club began in 1750 originally formed as a social club for racing enthusiasts, the group first starting meeting in the Red Lion Inn in Pall Mall before building the ‘Coffee Room’ in Newmarket in 1752. 
Not long after this is in 1767 a member was expelled for accusing the elite of cheating at cards. This led to a strict, formal election which shaped the club's prestige. 
In 1771, a man named Richard “Jockey” Vernon built “The New Rooms” securing a 60-year lease and a tidy 8% profit on his investment. 
For a century, the building was strictly divided, elite members used “The New Rooms” while others were relegated to the “Coffee Room” 
Most of the current architecture dates to the 1930s. Despite a major fire in 1935 that burnt down The Billiards Room and more, the site was restored and now houses the Rooms.
